  • plain flour — 200g
  • fine oatmeal — 100g
  • black treacle — 100g
  • golden syrup — 100g
  • salted butter — 100g
  • soft dark brown sugar — 50g
  • ground ginger — 2 tsp
  • baking powder — 1 tsp
  • whole milk — 80ml
  • egg — 1 medium

Method

    Preheat the oven to 160C (fan) and line the square tin with parchment paper.

    In a large saucepan, melt the butter, black treacle, golden syrup, and brown sugar over low heat until smooth; set aside to cool slightly.

    In a mixing bowl, combine the plain flour, fine oatmeal, ground ginger, and baking powder.

    Whisk the egg and milk together, then stir into the cooled treacle mixture.

    Pour the wet mixture into the dry ingredients and stir until just combined.

    Pour the batter into the prepared tin and bake for 35-40 minutes until firm to the touch.
