  • Dried oregano — 1 tsp
  • Lemon juice — 2 tbsp

    If using wooden skewers, soak them in cold water for 30 minutes before use to prevent burning.

    Chop the bell peppers, red onions, and courgettes into uniform 3cm chunks.

    Whisk the extra virgin olive oil, lemon juice, dried oregano, and sea salt in a small bowl to create the glaze.

    Thread the chopped vegetables onto the skewers, alternating colours for an appealing presentation.

    Brush the skewers generously with half of the lemon-herb glaze.

    Preheat the grill or griddle pan over a medium-high heat.

    Cook the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and showing nice char marks.
