  • smoked streaky bacon — 4 rashers
  • mature cheddar cheese — 2 slices
  • brioche buns — 2
  • butter (salted) — 10g
  • salt — 1 tsp
  • black pepper — 0.5 tsp

    Divide the beef mince into two equal portions and shape into patties slightly wider than the diameter of the brioche buns, indenting the centre with your thumb.

    Place the bacon rashers in a cold frying pan and turn the heat to medium; cook until crisp, then set aside on a paper towel.

    Season the patties generously with salt and pepper on both sides.
