  • fusilli pasta (dry) — 300g
  • tinned tuna in spring water, drained — 320g
  • full-fat mayonnaise — 150g
  • frozen sweetcorn — 100g
  • red onion, finely diced — 50g
  • fresh parsley, chopped — 10g

Method

    Bring a large saucepan of salted water to the boil and cook the fusilli pasta according to the packet instructions, adding the frozen sweetcorn in the last 3 minutes of boiling.

    Drain the pasta and sweetcorn in a colander and rinse under cold water to stop the cooking process.

    In a large mixing bowl, combine the drained tuna, mayonnaise, diced red onion, and chopped parsley.

    Add the cooled pasta and sweetcorn to the bowl and toss everything together until well coated.

    Serve immediately or chill in the fridge for 30 minutes to allow the flavours to meld.
