  • plain flour — 250g
  • warm water — 150ml
  • passata — 100g
  • mozzarella (full fat) — 125g
  • fresh basil leaves — 10g
  • extra virgin olive oil — 15ml
  • sea salt — 5g

Method

    Mix the plain flour, salt, and water in a bowl to form a soft dough, then knead on a floured surface for 2 minutes.

    Divide the dough into two balls and roll each out into a thin disc.

    Heat a dry frying pan over medium-high heat and cook each flatbread base for 2-3 minutes per side until golden brown spots appear.

    Remove the bases from the pan and spread the passata thinly over the top.

    Tear the mozzarella into small pieces and distribute over the tomato sauce.

    Return the pizzas to the pan, cover with a lid for 2 minutes until the cheese is melted.
