  • Braeburn apples — 4 medium
  • Soft brown sugar — 150g
  • Double cream — 100ml
  • Unsalted butter — 50g
  • Vanilla extract — 1 tsp

Method

    Core and slice each apple into 8 even wedges.

    Place the butter, soft brown sugar and double cream into a saucepan over medium heat.

    Whisk continuously as the mixture melts and begins to simmer.

    Allow the sauce to bubble gently for 3 to 5 minutes until it thickens into a glossy toffee consistency.

    Remove from the heat and stir in the vanilla extract.

    Arrange the apple wedges on a serving platter and either drizzle the warm toffee sauce over them or serve the sauce in a bowl for dipping.
