Ingredients

  • mascarpone — 125g
  • double cream — 100ml
  • caster sugar — 25g
  • strong espresso coffee, cooled — 60ml
  • savoiardi biscuits (ladyfingers) — 6 biscuits
  • cocoa powder — 1 tbsp

Method

    In a medium bowl, whisk the mascarpone, double cream, and caster sugar together until the mixture reaches a thick, whipped consistency with soft peaks.

    Pour the cooled espresso into a shallow bowl.

    Quickly dip 3 savoiardi biscuits into the espresso for 1 second each to avoid them getting too soggy, then break them in half to fit the base of each glass.

    Add a layer of the mascarpone cream mixture over the biscuit base in each glass.

    Repeat the layer with the remaining biscuits and the remaining cream mixture.
