Ingredients
- Large bell peppers — 4
- Cooked bread stuffing with herbs — 400g
- Mature cheddar cheese, grated — 150g
- Vegetable oil — 1 tbsp
- Fresh parsley, chopped — 10g
Method

Preheat your grill to a medium-high heat.

Slice the tops off the bell peppers and remove the seeds and white membranes.

In a mixing bowl, combine the cooked herb stuffing with half of the grated mature cheddar.

Stuff each pepper generously with the stuffing mixture, pressing down lightly.

Brush the exterior of the peppers with the vegetable oil to help them char slightly.

Place the peppers on the grill, using a sheet of foil if necessary to prevent them from tipping over.

Grill for 20-25 minutes, turning occasionally, until the peppers are tender and the stuffing is piping hot.

Top the peppers with the remaining cheese and grill for a further 2-3 minutes until the cheese is melted and bubbling.
