  • fresh strawberries — 400g
  • meringue nests — 150g
  • caster sugar — 2 tbsp
  • vanilla extract — 1 tsp

Method

    Hull and quarter the strawberries, placing them in a bowl with 1 tablespoon of caster sugar. Mash a few of them slightly with a fork to release their juices.

    In a large chilled mixing bowl, whip the double cream, remaining caster sugar, and vanilla extract until soft peaks form.

    Gently break the meringue nests into bite-sized chunks using your hands.

    Fold the meringue chunks and the majority of the strawberries into the whipped cream using a spatula, being careful not to over-mix so the meringue keeps some crunch.
