  • fresh strawberries — 400g
  • icing sugar — 50g
  • vanilla extract — 1 tsp

Method

    Hull and slice the strawberries into halves or quarters depending on their size, place them in a bowl, and toss with half of the icing sugar.

    Pour the cold double cream into a large chilled mixing bowl and add the remaining icing sugar and the vanilla extract.

    Using an electric whisk, whip the cream until it forms soft peaks; be careful not to over-whip into butter.

    Gently fold two-thirds of the strawberries into the whipped cream using a spatula to keep the mixture light.
