Ingredients

  • Pork spare ribs — 1.5kg
  • Tomato ketchup — 200ml
  • Dark muscovado sugar — 100g
  • Apple cider vinegar — 60ml
  • Worcestershire sauce — 30ml
  • Smoked paprika — 2 tsp
  • Garlic powder — 1 tbsp
  • Sunflower oil — 1 tbsp

Method

    Preheat your oven to 160C/140C fan/gas 3.

    Place the pork ribs on a large piece of foil, season with salt and pepper, wrap tightly, and roast for 2 hours until tender.

    While the ribs cook, combine the ketchup, muscovado sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, and sunflower oil in a small saucepan.

    Simmer the sauce over medium heat for 10 minutes until thickened and glossy, then set aside.

    Increase the oven temperature to 200C/180C fan/gas 6.

    Carefully unwrap the ribs, discard any excess fat in the foil, and place them on a clean baking tray.

    Brush the ribs generously with the barbecue glaze and roast for 15-20 minutes, brushing with more sauce halfway through, until sticky and caramelised.
