Ingredients

  • pizza dough (ready-made) — 400g
  • ricotta cheese (full fat) — 150g
  • fresh spinach — 100g
  • mozzarella cheese (grated) — 100g
  • extra virgin olive oil — 2 tbsp
  • garlic cloves (minced) — 3 cloves
  • parmesan cheese (grated) — 30g

Method

  1. 1

Preheat your oven to 220C/fan 200C/gas 7. If using a pizza stone, place it in the oven to heat up.

  2. 2

In a small bowl, mix the minced garlic with the extra virgin olive oil.

  3. 3

Briefly sauté the fresh spinach in a pan for 1-2 minutes until just wilted, then squeeze out any excess moisture.

  4. 4

Roll out the pizza dough on a floured surface to your desired thickness.

  5. 5

Brush the dough evenly with the garlic-infused olive oil.

  6. 6

Sprinkle the grated mozzarella over the base, then arrange the wilted spinach on top.

  7. 7

Add dollops of ricotta cheese across the pizza and sprinkle with grated parmesan.

  8. 8

Bake for 12-15 minutes until the crust is golden and the cheese is bubbling.

Why this works

The combination of creamy ricotta and sharp parmesan provides a perfect balance of textures, while the garlic-infused oil base cuts through the richness of the cheese to provide depth of flavour.
