Ingredients
- Bramley apples, peeled and chopped — 800g
- caster sugar — 100g
- ground cinnamon — 2 tsp
- plain flour — 200g
- rolled oats (dry) — 100g
- unsalted butter (chilled and cubed) — 125g
- light brown soft sugar — 100g
Method
- 1
Preheat your oven to 190°C (170°C fan).
- 2
Place the chopped apples, 50g of the caster sugar, and 1 tsp of cinnamon into a saucepan with a splash of water. Cook over medium heat for 5-8 minutes until slightly softened, then transfer to the baking dish.
- 3
In a large bowl, combine the flour, the remaining caster sugar, brown sugar, and remaining cinnamon.
- 4
Add the chilled cubed butter to the flour mixture and rub together with your fingertips until the texture resembles coarse breadcrumbs.
- 5
Stir in the rolled oats to the crumble mixture.
- 6
Sprinkle the crumble topping evenly over the apples.
- 7
Bake for 30-35 minutes until the topping is golden brown and the fruit juices are bubbling at the edges.

Why this works
The tartness of the Bramley apples perfectly cuts through the rich, buttery sweetness of the oat-based topping, while the cinnamon adds a warming aromatic depth.
