Ingredients

  • Smoked mackerel fillets — 250g
  • Cucumber — 1 medium
  • Radishes — 6 large
  • Spring onions — 2 stalks
  • Lime juice — 30ml
  • Extra virgin olive oil — 2 tbsp
  • Fresh coriander — 1 small bunch

Method

    Prepare the vegetables by thinly slicing the radish and cucumber into half-moons, and finely chopping the spring onions.

    In a small jar, whisk together the lime juice and extra virgin olive oil until emulsified.

    Remove the skin from the smoked mackerel fillets and flake the fish into bite-sized chunks, being careful to remove any small bones.

    Place the cucumber, radish, spring onions, and half of the chopped coriander into a large bowl.

    Drizzle the dressing over the vegetables and toss gently to coat.

    Top the dressed vegetables with the flaked smoked mackerel and garnish with the remaining fresh coriander before serving.
