- sirloin steak, well-marbled — 2 steaks, approx 250g each
- salted butter — 40g
- garlic cloves, crushed — 2 cloves
- fresh thyme sprigs — 3 sprigs
- vegetable oil — 1 tbsp
- sea salt flakes — 0.5 tsp
- black pepper, cracked — 0.5 tsp
Method

Remove the steaks from the fridge 30 minutes before cooking to bring them to room temperature.

Pat the steaks dry with kitchen paper and season generously on both sides with salt and cracked black pepper.

Heat the vegetable oil in a heavy-based frying pan over a high heat until smoking hot.

Carefully place the steaks into the pan and sear for 3 minutes on one side without moving them to develop a deep brown crust.

Flip the steaks and cook for another 2-3 minutes for medium-rare.

Reduce the heat to medium and add the butter, crushed garlic, and thyme sprigs to the pan.

Once the butter is foaming, tilt the pan slightly and use a spoon to continuously baste the steaks with the garlic-infused butter for 1 minute.

Remove the steaks from the pan and let them rest on a warm plate for at least 5 minutes before serving to ensure tenderness.
