Ingredients
- plain flour — 125g
- large eggs — 2
- whole milk — 300ml
- butter (salted) — 30g
- fresh spinach — 300g
- Gruyère cheese (grated) — 100g
- garlic (minced) — 2 cloves
- vegetable oil — 1 tbsp
Method
- 1
Whisk the plain flour, eggs, and half the whole milk into a smooth batter, then gradually whisk in the remaining milk.
- 2
Heat a lightly oiled non-stick pan over medium heat; pour in a thin layer of batter, swirling to coat, and cook for 1 minute per side until golden. Repeat until all batter is used.
- 3
In the same pan, melt half the butter and sauté the minced garlic and fresh spinach until wilted; drain any excess liquid.
- 4
Place a crepe back in the pan on low heat, add a portion of the spinach mixture and a handful of Gruyère cheese to the centre.
- 5
Fold the crepe into quarters or roll it, allowing the cheese to melt fully, then serve immediately.

Why this works
The earthy, slightly bitter notes of the spinach are perfectly balanced by the nutty, salty depth of the melted Gruyère, all encased in a soft, neutral crepe base.
