Ingredients

  • Stale crusty white bread, cubed — 300g
  • Cooked ham, diced — 200g
  • Large free-range eggs — 6
  • Whole milk — 250ml
  • Double cream — 100ml
  • Mature cheddar cheese, grated — 150g
  • Fresh parsley, chopped — 10g
  • Unsalted butter — 20g

Method

  1. 1

Preheat your oven to 180C (fan) or 200C (conventional).

  2. 2

Grease the baking dish generously with 10g of butter.

  3. 3

In a large bowl, whisk together the eggs, whole milk, double cream, and half of the grated cheese.

  4. 4

Toss the cubed bread and diced ham into the egg mixture and let it soak for 15 minutes to absorb the liquid.

  5. 5

Pour the mixture into the prepared baking dish and sprinkle the remaining cheese and fresh parsley over the top.

  6. 6

Bake for 30 minutes until the top is golden brown and the centre is set.

  7. 7

Remove from the oven and allow to rest for 5 minutes before serving.

Why this works
