- Pork sausages (standard) — 8 sausages
- Pumpkin, peeled and cubed — 600g
- Red onion, sliced — 1 large
- Vegetable oil — 2 tbsp
- Dried sage — 1 tsp
- Salt and black pepper — to taste
Method

Heat one tablespoon of vegetable oil in a large frying pan over medium heat.

Add the sliced sausages and brown them on all sides, then remove from the pan and set aside.

Add the remaining oil to the pan and tip in the cubed pumpkin and sliced red onion.

Cook for 10-12 minutes, stirring occasionally, until the pumpkin is tender and starting to caramelise at the edges.

Slice the browned sausages into chunks and return them to the pan with the pumpkin.

Sprinkle with dried sage, salt, and pepper, tossing everything together for another 5 minutes until the sausage is cooked through and everything is hot.
