  • Pork sausages (high meat content) — 8 sausages
  • Bramley apples, sliced — 3 medium apples
  • Red onion, sliced — 2 large
  • Sunflower oil — 2 tbsp
  • Fresh sage leaves, chopped — 1 tbsp
  • Dried thyme — 1 tsp
  • Sea salt and cracked black pepper — to taste

Method

    Heat the sunflower oil in a large skillet over medium-high heat.

    Add the sausages to the pan and cook for 8-10 minutes, turning occasionally until browned on all sides.

    Remove the sausages from the pan and set aside.

    Add the sliced red onion to the same pan and sauté for 3-4 minutes until softened.

    Add the apple slices to the pan, arranging them around the onions. Cook for 5 minutes until they start to soften and brown slightly.

    Return the sausages to the skillet, tucking them in among the apples and onions.

    Sprinkle with fresh sage, thyme, salt, and pepper.

    Reduce heat to low and cover, simmering for another 5 minutes until the sausages are cooked through and the apples are tender.
