    Using a sharp paring knife, carefully cut an 'X' into the flat side of each chestnut shell, ensuring you pierce the shell but not deeply into the nut meat itself.

    Place the chestnuts on a baking tray or in a cast iron skillet with the 'X' side facing upwards.

    Roast for 20 to 25 minutes, shaking the pan occasionally, until the shells have curled back at the incision and the meat inside is tender.

    Remove from the heat and immediately wrap the hot chestnuts in a clean kitchen towel for 5 minutes; the steam helps loosen the inner skin.
