Ingredients

  • beef mince (15% fat) — 250g
  • eggs — 4 large
  • burger buns — 2
  • vegetable oil — 2 tbsp
  • curry powder — 1 tsp
  • mayonnaise — 2 tbsp
  • chilli sauce — 2 tbsp
  • finely chopped onion — 50g

Method

    Mix the beef mince with half the curry powder and half the onions. Shape into two thin patties.

    Heat a little oil in the pan and fry the patties until cooked through. Remove and keep warm.

    Toast the burger buns in the same pan. Set aside.

    Beat two eggs in a small bowl. Pour into the hot pan to form a very thin omelette layer.

    While the egg is still slightly runny, place a cooked patty in the centre. Drizzle with mayonnaise, chilli sauce, and the remaining curry powder.

    Fold the edges of the omelette over the patty to form a square parcel.

    Place the bun base on top of the omelette parcel, then flip the whole thing over onto a plate so the parcel is enclosed inside the bun. Repeat for the second serving.
