Ingredients
- dried spaghetti — 200g (dry)
- tinned tuna in spring water, drained — 280g
- extra virgin olive oil — 3 tbsp
- garlic cloves, minced — 3 cloves
- dried chilli flakes — 0.5 tsp
- fresh parsley, chopped — 15g
- lemon juice — 1 tbsp
Method

Bring a large saucepan of salted water to the boil and cook the spaghetti according to packet instructions until al dente.

While the pasta cooks, heat the extra virgin olive oil in a large frying pan over medium heat.

Add the minced garlic and chilli flakes to the frying pan, sautéing for 1-2 minutes until fragrant but not browned.

Drain the tuna well and add it to the frying pan, breaking it into large flakes with a fork. Heat through for 2 minutes.

Reserve 50ml of the pasta cooking water, then drain the spaghetti.

Add the cooked spaghetti, lemon juice, and the reserved pasta water to the frying pan with the tuna mixture.

Toss everything together over low heat for 1 minute so the oil and pasta water create a light, silky sauce that coats the noodles.

Remove from the heat, stir in the fresh parsley, and serve immediately.
