  • lamb chops, loin, raw — 4 chops
  • garlic, peeled and smashed — 4 cloves
  • fresh rosemary sprigs — 3 sprigs
  • salted butter — 30g
  • olive oil — 1 tbsp
  • sea salt — 0.5 tsp
  • black pepper — 0.5 tsp

Method

    Pat the lamb chops dry with kitchen paper and season both sides generously with sea salt and black pepper.

    Heat the olive oil in the frying pan over medium-high heat until shimmering.

    Add the lamb chops to the pan and sear for 3 to 4 minutes on the first side without moving them to develop a deep brown crust.

    Turn the chops over and immediately add the butter, smashed garlic, and rosemary sprigs to the pan.

    As the butter melts and foams, tilt the pan slightly and use a large spoon to baste the chops continuously with the infused butter for another 3 minutes for medium-rare.
