Ingredients

  • plain flour — 350g
  • baking powder — 2 tbsp
  • caster sugar — 50g
  • unsalted butter, chilled and cubed — 85g
  • buttermilk — 175ml
  • whole milk (for brushing) — 20ml

Method

    Preheat your oven to 220C (200C fan). Line a baking tray with parchment paper.

    Sift the flour and baking powder into a large mixing bowl. Stir in the caster sugar.

    Add the cold cubed butter and rub it into the flour using your fingertips until the mixture resembles fine breadcrumbs.

    Make a well in the centre and pour in the buttermilk. Mix quickly with a round-bladed knife until the dough starts to clump together.

    Turn the dough onto a lightly floured surface and pat it down gently to a thickness of about 3cm.

    Use a round cutter to stamp out scones, or simply cut into 6 even wedges with a knife.

    Place on the prepared tray, brush the tops with a little whole milk, and bake for 10-12 minutes until risen and golden brown.

    Cool slightly on a wire rack before serving warm.
