Ingredients

  • braising steak, cubed — 600g
  • plain flour — 2 tbsp
  • brown ale — 330ml
  • beef stock — 300ml
  • onion, finely chopped — 1 medium
  • sunflower oil — 2 tbsp
  • ready-rolled puff pastry — 320g
  • egg, beaten — 1 medium
  • Worcestershire sauce — 1 tbsp

Method

    Heat the oil in a large casserole dish over medium-high heat. Brown the beef cubes in batches until seared, then remove and set aside.

    Lower the heat, add the onion to the dish, and cook until soft and translucent.

    Return the beef to the dish and sprinkle with the plain flour, stirring for 1 minute to coat.

    Slowly pour in the ale and beef stock, stirring constantly to prevent lumps. Add the Worcestershire sauce.

    Cover and simmer on low heat for 90 minutes until the beef is tender and the sauce has thickened.

    Preheat your oven to 200°C (180°C fan). Transfer the beef mixture to a pie dish.

    Roll out the puff pastry to cover the dish, trimming the edges and pressing firmly to seal. Cut a small slit in the centre to allow steam to escape.

    Brush the pastry lid with the beaten egg.

    Bake for 25-30 minutes until the pastry is puffed and golden brown.
