Ingredients
- baking potatoes — 800g
- fresh cheese curds — 250g
- beef stock — 500ml
- plain flour — 30g
- unsalted butter — 40g
- vegetable oil for frying — 500ml
Method

Peel the baking potatoes and cut into even-sized chips. Soak in cold water for 30 minutes, then drain and pat thoroughly dry.

Heat the oil to 160°C and fry the chips until soft but not browned. Remove and drain.

For the gravy, melt the butter in a pan, add the flour, and cook for 2 minutes. Gradually whisk in the beef stock and simmer until thickened.

Increase the oil temperature to 190°C and fry the chips again until golden and crispy.

Place the hot chips into bowls, top with the cheese curds, and pour the hot gravy over the top to melt the cheese slightly.
