  • baking potatoes, peeled and cubed — 800g
  • frozen garden peas — 300g
  • salted butter — 60g
  • double cream — 100ml
  • sea salt — 1 tsp
  • black pepper — 0.5 tsp

Method

    Place the peeled and cubed baking potatoes in a large saucepan, cover with cold water, add a generous pinch of salt, and bring to a boil.

    Simmer the potatoes for 15-20 minutes until tender enough to be easily pierced with a fork.

    While the potatoes are cooking, boil the garden peas in a separate small saucepan for 3 minutes, then drain.

    Drain the potatoes thoroughly and return them to the warm saucepan to steam dry for 1 minute.
