- leeks, trimmed and sliced — 3 large
- baking potatoes, peeled and diced — 800g
- unsalted butter — 50g
- vegetable stock — 1 litre
- double cream — 100ml
- sea salt — 1 tsp
- black pepper — 0.5 tsp
Method

Melt the butter in a large saucepan over medium heat.

Add the sliced leeks and cook for 8-10 minutes until softened but not browned.

Add the diced potatoes to the pan and stir for 2 minutes to coat them in the butter.

Pour in the vegetable stock and bring the mixture to a boil.

Reduce the heat, cover, and simmer for 20 minutes until the potatoes are completely tender.

Remove from heat and use an immersion blender to blitz the soup until smooth and creamy.
