  • dried spaghetti — 400g (dry)
  • fresh basil leaves — 50g
  • pine nuts — 50g
  • parmesan cheese, grated — 60g
  • garlic cloves — 2
  • extra virgin olive oil — 100ml
  • sea salt — 1 tsp

Method

    Bring a large pot of salted water to the boil and cook the spaghetti according to packet instructions.

    While the pasta cooks, place the basil, pine nuts, garlic, parmesan, and salt into a food processor.

    Pulse the ingredients while gradually pouring in the olive oil until a smooth paste forms.

    Drain the pasta, reserving a small cup of the starchy cooking water.

    Return the pasta to the pot, add the pesto and a splash of reserved cooking water to loosen the sauce, tossing everything together until well coated.
