  • lemon juice — 15ml
  • vegetable oil — 15ml
  • sea salt — 1/2 tsp
  • black pepper — 1/4 tsp

Method

    Pat the scallops thoroughly dry with paper towels; moisture on the surface prevents a good sear.

    Season both sides of the scallops lightly with sea salt and black pepper.

    Heat the vegetable oil in the frying pan over high heat until just starting to smoke.

    Place the scallops in the pan, ensuring they do not touch, and sear undisturbed for 2 minutes until a golden-brown crust forms.

    Flip the scallops, add the butter to the pan, and as it melts and foams, squeeze in the lemon juice.
