Ingredients
- lamb mince (20% fat) — 600g
- fresh mint leaves, finely chopped — 20g
- brioche buns — 4 units
- red onion, finely diced — 1 medium
- garlic, crushed — 2 cloves
- feta cheese, crumbled — 100g
- sunflower oil — 1 tbsp

In a large mixing bowl, combine the lamb mince, finely chopped mint, diced red onion, garlic, and crumbled feta. Mix gently by hand until just combined, being careful not to overwork the meat.

Divide the mixture into four equal portions and shape them into patties about 2cm thick.

Brush the grill pan with sunflower oil and heat over a medium-high flame.

Place the patties on the grill and cook for 5-6 minutes on each side until charred and cooked through to your preference.

While the burgers rest, lightly toast the brioche buns on the grill.

Assemble the burgers by placing the lamb patty in the bun and serve immediately.
