Ingredients

  • basmati rice (dry) — 150g
  • chickpeas, tinned (drained) — 400g
  • cucumber, diced — 150g
  • cherry tomatoes, halved — 150g
  • fresh parsley, chopped — 20g
  • extra virgin olive oil — 30ml
  • lemon juice — 30ml
  • dried oregano — 1 tsp
  • garlic, minced — 1 clove

Method

    Cook the basmati rice according to packet instructions, then drain and rinse under cold water until completely cool. Drain well.

    In a small jar, combine the extra virgin olive oil, lemon juice, minced garlic, and dried oregano. Shake or whisk until well emulsified.

    In a large mixing bowl, combine the cooled rice, drained chickpeas, diced cucumber, halved cherry tomatoes, and fresh parsley.
