Ingredients
- plain flour — 120g
- baking powder — 1 tsp
- large eggs — 2
- whole milk — 150ml
- leeks, sliced — 200g
- full-fat cream cheese — 100g
- fresh chives, chopped — 10g
- unsalted butter — 20g
Method
- 1
Melt half the butter in a pan over medium heat and sauté the leeks until softened and slightly caramelised, about 6 minutes. Remove from heat.
- 2
In a large bowl, whisk together the flour, baking powder, eggs, and milk until a smooth batter forms.
- 3
Fold the cooked leeks, cream cheese, and chopped chives into the batter until just combined (it is okay if there are small lumps of cream cheese).
- 4
Heat the remaining butter in the frying pan over medium heat.
- 5
Spoon small ladles of batter into the pan and cook for 3-4 minutes per side until golden brown and cooked through.
- 6
Serve immediately while warm.

Why this works
The gentle sweetness of the sautéed leeks perfectly complements the tanginess of the cream cheese, while the herbs provide a fresh lift that cuts through the richness of the pancake base.
