Ingredients

  • lamb mince (20% fat) — 500g
  • penne pasta (dry) — 320g
  • fresh mint leaves, chopped — 30g
  • garlic cloves, minced — 3 cloves
  • parmesan cheese (grated) — 50g
  • olive oil — 2 tbsp
  • lemon zest — 1 tbsp
  • sea salt — 1 tsp

Method

  1. 1

Bring a large saucepan of salted water to the boil and cook the penne according to packet instructions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large frying pan over medium-high heat.

  3. 3

Add the lamb mince to the pan and cook until browned and crispy, breaking it up with a wooden spoon.

  4. 4

Stir in the minced garlic and cook for 1 minute until fragrant.

  5. 5

Reserve 100ml of the pasta water, then drain the penne.

  6. 6

Add the drained penne to the lamb along with the reserved pasta water, fresh mint, lemon zest, and half the parmesan.

  7. 7

Toss everything together over low heat for 1-2 minutes until the sauce coats the pasta nicely.

  8. 8

Season to taste and serve topped with the remaining parmesan cheese.
