Ingredients

  • baking potatoes — 2 large
  • mature cheddar cheese (full fat) — 150g
  • salted butter — 20g
  • vegetable oil — 1 tbsp
  • sea salt — 0.5 tsp

Method

  1. 1

    Preheat your oven to 200°C (180°C fan/gas mark 6).

  2. 2

Wash and dry the baking potatoes thoroughly. Pierce each potato several times all over with a fork.

  3. 3

Rub the skins with vegetable oil and a generous pinch of sea salt to ensure a crispy finish.

  4. 4

Place the potatoes directly onto the oven shelf and bake for 50-60 minutes, or until the skins are crisp and the centre is tender when pierced with a knife.

  5. 5

Carefully slice each potato open lengthways. Use a fork to fluff up the steaming hot interior.

  6. 6

Divide the butter between the two potatoes and mash it into the fluffy centre.

  7. 7

Top each potato with the grated mature cheddar cheese and return to the oven for 3-5 minutes, or until the cheese is bubbling and golden.

  8. 8

    Serve immediately while hot.

Why this works
