Ingredients

  • rolled oats (dry) — 50g
  • semi-skimmed milk — 250ml
  • brown sugar — 1 tbsp
  • raisins — 30g
  • sea salt — 1 pinch

Method

  1. 1

Combine the rolled oats, semi-skimmed milk, and a pinch of salt in a small saucepan.

  2. 2

Place over medium heat and bring to a gentle simmer, stirring frequently to prevent sticking.

  3. 3

Cook for 5 to 7 minutes until the oats have softened and absorbed most of the liquid to your desired consistency.

  4. 4

Remove from the heat and stir in half of the raisins.

  5. 5

Transfer the porridge to a serving bowl, top with the brown sugar and the remaining raisins before serving.

Why this works

The earthy, nuttiness of the oats provides a perfect neutral base for the deep caramel notes of the brown sugar, while the raisins add bursts of natural sweetness and texture.
