- popcorn kernels — 100g
- sunflower oil — 3 tbsp
- unsalted butter — 50g
- runny honey — 80g
- sea salt — 0.5 tsp
Method
- 1
Place the sunflower oil and 3 popcorn kernels into the large saucepan over medium heat, covering with the lid.

Once the test kernels pop, add the remaining popcorn kernels, cover, and remove from heat for 30 seconds to equalise the temperature.

Return to medium heat, shaking the pan occasionally until the popping slows to a stop.
- 4
In a small saucepan, melt the butter and honey together over low heat until combined and slightly bubbling.
- 5
Pour the honey-butter mixture over the freshly popped popcorn in a large bowl and toss thoroughly to coat.
- 6

Why this works
The combination of the floral, caramel-like sweetness of the honey balances perfectly against the earthy saltiness of the corn, while the butter adds a necessary richness to the texture.
