Ingredients

  • gammon steaks (smoked) — 2 steaks (approx 200g each)
  • honey — 2 tbsp
  • English mustard — 1 tbsp
  • sunflower oil — 1 tbsp
  • carrots, peeled and batoned — 2 large
  • parsnips, peeled and batoned — 2 medium
  • olive oil — 1 tbsp

Method

    Preheat your oven to 200°C/gas mark 6.

    Toss the carrot and parsnip batons with olive oil in a roasting tray, season lightly with black pepper, and roast for 30 minutes until tender and golden.

    While the vegetables roast, whisk together the honey and English mustard in a small bowl to create the glaze.

    Heat the sunflower oil in a non-stick frying pan over medium-high heat.

    Add the gammon steaks to the pan and sear for 3-4 minutes per side until nicely browned.

    Reduce the heat to low, pour the honey-mustard glaze over the steaks, and turn them frequently for 2-3 minutes until the glaze bubbles and coats the meat.

    Serve the gammon steaks immediately with the roasted root vegetables.
