Ingredients

  • parsnips, peeled and quartered — 800g
  • honey — 60ml
  • olive oil (extra virgin) — 30ml
  • fresh thyme leaves — 1 tbsp
  • sea salt — 1 tsp
  • black pepper — 0.5 tsp

Method

    Preheat your oven to 200°C (fan 180°C / Gas mark 6).

    In a large mixing bowl, toss the quartered parsnips with the olive oil, salt, and black pepper until evenly coated.

    Spread the parsnips in a single layer on a large roasting tray and roast for 20 minutes.

    In the same mixing bowl, whisk together the honey and fresh thyme.

    Remove the tray from the oven, drizzle the honey-thyme mixture over the parsnips, and toss carefully with tongs to coat.

    Return to the oven for a further 10-15 minutes, or until the parsnips are tender, golden, and sticky with the glaze.
