Ingredients
- whole chicken, skin on — 1.5 kg
- fresh rosemary — 3 sprigs
- lemon, sliced — 2 units
- garlic cloves, crushed — 4 cloves
- olive oil — 3 tbsp
- sea salt — 1 tbsp
- black pepper — 1 tsp
Method
- 1
Preheat your oven to 200C/180C fan.
- 2
Pat the chicken dry with kitchen paper to ensure the skin crisps effectively.
- 3
In a small bowl, combine olive oil, crushed garlic, chopped rosemary, salt, and pepper.
- 4
Rub the mixture all over the chicken and underneath the breast skin.
- 5
Stuff the cavity of the chicken with the lemon slices and remaining rosemary sprigs.
- 6
Truss the legs with kitchen string if desired, then place in a roasting tin.
- 7
Roast for 70-75 minutes until the juices run clear and the skin is golden brown.
- 8
Allow the chicken to rest for at least 15 minutes before carving to ensure succulence.
Why this works
The acidity of the lemon cuts through the rich fat of the chicken skin, while the woodsy, aromatic profile of rosemary provides a classic savoury depth that complements the natural flavour of the poultry.
