  • onion, finely chopped — 1 medium
  • garlic cloves, crushed — 2 cloves
  • tomato puree — 2 tbsp
  • beef stock — 200ml

Method

  1. 1

Heat the olive oil in the frying pan over medium heat and fry the onion until softened.

  4. 4

Pour in the tinned tomatoes and beef stock, bring to a simmer, and cook for 45-60 minutes until the sauce has thickened.

  5. 5

While the sauce simmers, boil a large pan of salted water and cook the spaghetti according to packet instructions.

  6. 6

Drain the pasta and toss with the bolognese sauce, serving immediately.

Why this works

The slow cooking of the beef mince allows the fat to render and infuse with the tomato acidity, while the tomato puree adds a deep, concentrated umami base that coats the pasta perfectly.
