  • baking potatoes, peeled and diced into 1cm cubes — 500g
  • cooked ham, diced — 250g
  • sunflower oil — 3 tbsp
  • red onion, finely diced — 1 medium
  • fresh parsley, chopped — 2 tbsp
  • fresh chives, snipped — 1 tbsp
  • sea salt — 1 tsp
  • black pepper — 0.5 tsp

Method

    Place the cubed potatoes in a pan of boiling salted water for 5 minutes until just tender, then drain thoroughly and pat dry with kitchen paper.

    Heat 2 tablespoons of sunflower oil in a large frying pan over a medium-high heat.
