Ingredients
- large flatbreads — 2
- pumpkin purée — 150g
- pork sausages (high pork content) — 200g
- mozzarella cheese (grated) — 100g
- double cream — 30ml
- dried sage — 1 tsp
- red onion (thinly sliced) — 50g
Method

Preheat your oven to 200C/180C fan/gas mark 6.

Remove the sausage meat from its casings and fry in a pan over medium heat until browned and broken into small crumbles; drain off excess fat.

In a small bowl, mix the pumpkin purée with the double cream and half of the dried sage until smooth.

Place the flatbreads on a baking tray and spread the pumpkin mixture evenly over each base.

Scatter the cooked sausage crumbles and sliced red onion over the top of the pumpkin base.

Sprinkle with the grated mozzarella and the remaining dried sage.

Bake in the oven for 10-12 minutes until the edges are crispy and the cheese is bubbling and golden.
