Ingredients
- courgette — 2 medium
- red pepper — 2 large
- red onion — 2 large
- aubergine — 1 medium
- extra virgin olive oil — 60 ml
- garlic, minced — 3 cloves
- dried oregano — 1 tbsp
- sea salt — 1 tsp
- black pepper — 0.5 tsp

Soak the wooden skewers in water for 30 minutes to prevent burning.

Chop the courgette, red pepper, red onion, and aubergine into uniform 3cm chunks.
