Ingredients

  • salmon fillets — 2 fillets
  • olive oil — 2 tbsp
  • fresh lemon — 1 medium
  • fresh dill — 1 tbsp, chopped
  • fresh parsley — 1 tbsp, chopped
  • garlic cloves, minced — 2 cloves
  • sea salt — 1/2 tsp
  • black pepper — 1/4 tsp

Method

  1. 1

Preheat your grill or griddle pan to a medium-high heat.

  2. 2

In a small bowl, whisk together the olive oil, minced garlic, chopped dill, chopped parsley, salt, and black pepper.

  3. 3

Slice half of the lemon into thin rounds and juice the other half.

  4. 4

Brush the salmon fillets generously with the herb-oil mixture.

  5. 5

Place the salmon on the grill, skin-side down first if applicable, and cook for 4-5 minutes.

  6. 6

Flip the salmon carefully and place the lemon slices on top of the fillets, drizzling with any remaining lemon juice.

  7. 7

Grill for a further 3-4 minutes until the salmon is opaque and flakes easily with a fork.

  8. 8

Remove from the heat and serve immediately.

Why this works

The natural richness of the salmon is perfectly balanced by the sharp acidity of lemon, while the fresh herbs provide an aromatic lift that cuts through the fats, resulting in a light yet satisfying meal.
