Ingredients

  • chicken breast, skinless and boneless — 4 breasts
  • lemon juice, freshly squeezed — 60ml
  • extra virgin olive oil — 4 tbsp
  • garlic cloves, minced — 3 cloves
  • dried oregano — 1 tbsp
  • sea salt — 1 tsp
  • black pepper — 0.5 tsp

Method

    In a mixing bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, dried oregano, salt, and black pepper.

    Place the chicken breasts into the bowl or a sealable bag and coat thoroughly with the marinade, then refrigerate for at least 30 minutes to infuse flavours.

    Preheat your grill pan or outdoor grill to a medium-high heat.

    Remove the chicken from the marinade and place on the hot grill.

    Cook for 6 to 8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 75°C.

    Remove from the heat and let the chicken rest for 5 minutes before serving.
