Ingredients

  • lamb leg steak — 300g
  • pearl barley (dry) — 120g
  • spring greens, shredded — 200g
  • salted butter — 30g
  • garlic, minced — 3 cloves
  • olive oil — 1 tbsp
  • lemon juice — 1 tbsp

Method

    Place the pearl barley in a medium saucepan with 500ml water and a pinch of salt. Bring to the boil, then simmer for 20 minutes until tender. Drain well.

    While the barley cooks, season the lamb steaks with salt and black pepper.

    Heat the olive oil in a frying pan over medium-high heat. Add the lamb steaks and cook for 3-4 minutes per side for medium-rare, then remove from the pan to rest.

    In the same pan, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

    Toss the shredded spring greens into the pan with the garlic butter. Cook for 2-3 minutes until wilted but still bright green.

    Stir the cooked pearl barley into the greens and mix in the lemon juice.

    Slice the rested lamb into strips and serve on top of the greens and barley mixture.
