Ingredients
- large king prawns, peeled and deveined — 400g
- salted butter — 50g
- garlic cloves, finely minced — 4 cloves
- fresh red chilli, finely diced — 1 medium
- fresh parsley, chopped — 15g
- lemon juice — 1 tbsp
Method
- 1
Pat the prawns dry with kitchen paper to ensure a good sear.
- 2
Heat half of the butter in a large frying pan over medium-high heat until foaming.
- 3
Add the prawns to the pan in a single layer and cook for 2 minutes until they turn pink and opaque.
- 4
Add the remaining butter, minced garlic, and chilli to the pan, tossing the prawns for another minute until fragrant.
- 5
Remove from heat immediately to prevent the garlic from burning.
- 6
Stir in the fresh parsley and lemon juice, tossing well to coat the prawns in the sauce.

Why this works
The combination of high-fat salted butter provides a luxurious mouthfeel that balances the natural sweetness of the prawns, while the sharp garlic and spicy chilli create a vibrant flavour profile cut by the acidity of fresh lemon.
