Ingredients

  • spaghetti (dry) — 200g
  • king prawns, raw and peeled — 250g
  • unsalted butter — 40g
  • garlic, crushed — 4 cloves
  • dried chilli flakes — 1 tsp
  • fresh parsley, chopped — 15g
  • extra virgin olive oil — 1 tbsp
  • lemon juice — 1 tbsp

Method

    Bring a large saucepan of salted water to the boil and cook the spaghetti according to packet instructions until al dente.

    While the pasta cooks, heat the olive oil and 20g of the butter in a large frying pan over medium heat.

    Add the king prawns to the pan and cook for 2-3 minutes until they turn pink and opaque, then remove them from the pan and set aside.

    In the same pan, add the remaining 20g of butter, the crushed garlic, and chilli flakes, sautéing for 1 minute until fragrant but not browned.

    Drain the spaghetti, reserving a small cup of the starchy pasta water.

    Return the prawns to the frying pan and toss in the cooked spaghetti and a splash of reserved pasta water to emulsify the sauce.

    Remove from the heat, stir in the lemon juice and chopped parsley, and serve immediately.
