Ingredients

  • French baguette — 1 medium loaf
  • salted butter (softened) — 50g
  • garlic (minced) — 3 cloves
  • tomato purée — 4 tbsp
  • mozzarella cheese (grated) — 150g
  • dried oregano — 1 tsp
  • fresh parsley (chopped) — 1 tbsp

Method

    Preheat your oven to 200C (fan oven).

    Cut the French baguette in half lengthways and place both halves cut-side up on a baking tray.

    In a small bowl, mix the softened butter with the minced garlic and chopped parsley.

    Spread the garlic butter mixture evenly over the cut surfaces of the baguette.

    Bake the bread in the oven for 5 minutes until just starting to crisp.

    Remove from the oven and spread the tomato purée over the garlic-buttered surface.

    Top with the grated mozzarella and sprinkle with dried oregano.

    Return to the oven for a further 8-10 minutes, or until the cheese is bubbling and golden.
